Roasted Harvest Soup

Sorry I don't have a pic of it in a bowl because we ate it too fast!

Butternut Squash Boom

Fall is here and that means squash! I know they are a little funny to look at but these babies sure are delicious! Here is one of my FAVORITE veganized squash recipes, it literally tastes like fall in your mouth.

Fa-Fa-Fajitas!

Long and overdue recipe!

Hey Everyone!! So sorry it has taken me so long to post another recipe. Things have been busy to say the least, but I will save that for another post! Let me give you a recipe to make up for my blogging hiatus. These fajitas are so so so tasty! They came about when a really good friend, Kristine, told me about a recipe of hers. Kristine is an omnivore but when she describes her dishes to me, she replaces the animal ingredient with Julie-friendly ingredients. This way we can talk cooking and even share recipes—something I don’t usually do with my omnivore friends. I swear she will be vegan at some point. I’m just being patient and waiting until she comes around. Hehehe.

Epic Eggplant Sandwich

Looking at all my posts it seems as though I am on a Daiya kick and to that I say, why not? It’s fun to work with and to see that it actually melts is awesome. I have heard from some that it tastes salty or weird but after using it a number of times and with a number of different vegetables I think I’ve figured out how to make Daiya work. I personally don’t enjoy it as much when it is cold/unmelted, to me it just doesn’t work and you need to use a vegetable that it won’t overpower. If you don’t feel like using it though I don’t think it will lessen the awesomeness of this sandwich in any way. So use it or lose it!

Easy Delish Breakfast

I will admit that I am kind of a carb lover but for me it really comes in waves. I can easily go without eating pasta and bread but when I want it, I want it now dammit. Aaron and I are suckers for bagels, especially everything bagels (we also love other flavors). We love Hometown Bagels that are Chicago-Style. Apparently they are baked with steam, rather than being boiled then baked. We are lucky cause these particular bagels are sold at the farmers market downtown at the Daily Plaza and Aaron works right by there! He picks some up for us when needed on Thursdays.

The Perfect Bite Burrito

This burrito is another collaborative creation. My friend Terran and I really jive well in the kitchen and bounce ideas back and forth like nobody’s business. We wanted to come up with a fairly simple yet delicious burrito. You can easily get carried away with what you put in them and we wanted to pick ingredients that go together so well that they create the perfect bite.

If you haven’t noticed I tend to make dishes in quantities that serve more than 1 or 2 people. I do this because I tend to buy ingredients in larger quantities which is more affordable and because I like to have leftovers for lunch the next day so that we don’t go out and buy our lunches.

Busy weekend!

Hey all! Sorry I haven’t posted a new recipe yet. I have been a busy girl which I must say feels good. The busier I am the more I seem to get done and the more motivated I am. Give me a super lax schedule and I put things off forever.

Comfort in a Bowl

This is a dish that I came across a while back and made some modifications to our taste (here’s a link to the original). It is so delicious and easy that Aaron has taken it upon himself to master it as well, which I love! I was photographer the day this was made and he was head chef. He is a great cook and gives himself less credit than he deserves. This dish requires minimal ingredients and is pretty quick from start to finish. If you are a garlic lover then you will go bananas over this!

Killer Rellenos!

This is one of my new favorite veganized dishes. We have wanted to veganise this Chile Rellenos for ages and with the added help, creativity, and brain power from our good friend Terran, we have done it! Thanks Terran. I must say, our brains combined create some awesome dishes, hehe. On to the recipe and probably way too many pictures, but I find photos to help so much when I am learning something new.
