On becoming vegan

Well, this will be an interesting point in my life to look back on and try to remember. I feel like it happened so fast that it’s kind of a blur. If you read my Who am I post then you know the first step to changing how and what I eat started with a slap in the face comment from a friend, “you say you love animals, you work with them, and yet you eat them.” Immediately the gears in my brain started clicking and I thought, “well shit, that’s true. I do love animals and I do work with them. Why on earth would I be okay with eating them?! Well, I’m not!”

News, Funnies, and Interesting Stories

First let’s start with a funny. I just read on the Huffington Post about a girl ruining 65 pairs of underwear with chili. My first thought was, was she wearing 65 pairs of underwear, eating Chili and then shit herself?! Probably not but it was funny to picture it. Once I read more (read story here) I came to find out she went in and poured chili on a whole display of underwear in a Victoria’s Secret store. Apparently she had shop lifted there and was pissed that she wasn’t allowed back in! HA!

The Perfect Bite Burrito

This burrito is another collaborative creation. My friend Terran and I really jive well in the kitchen and bounce ideas back and forth like nobody’s business. We wanted to come up with a fairly simple yet delicious burrito. You can easily get carried away with what you put in them and we wanted to pick ingredients that go together so well that they create the perfect bite.

If you haven’t noticed I tend to make dishes in quantities that serve more than 1 or 2 people. I do this because I tend to buy ingredients in larger quantities which is more affordable and because I like to have leftovers for lunch the next day so that we don’t go out and buy our lunches.

Amazeballs Alfredo

I had a delicious Alfredo at The Chicago Diner when it was on their specials menu and HAD to figure out how to recreate it since I knew it wouldn’t be available for long. Comfort in a Bowl

This is a dish that I came across a while back and made some modifications to our taste (here’s a link to the original). It is so delicious and easy that Aaron has taken it upon himself to master it as well, which I love! I was photographer the day this was made and he was head chef. He is a great cook and gives himself less credit than he deserves. This dish requires minimal ingredients and is pretty quick from start to finish. If you are a garlic lover then you will go bananas over this!

Cool and refreshing Mango Salad

I made this recipe up the other day when I made the Chile Rellenos. I thought since it’s summer and toasty out, I should make something the complete opposite that will cool our palates. I knew I wanted to use mangos and while put-zing around the produce section of our local Whole Paycheck, I thought jicama would add the right kind of crunch to the dish. Here’s the full recipe,

Serves: 4, as a side
Difficulty: easy, except mangos are slippery suckers so be careful!
Time: with music and distracting animals 15 min

Killer Rellenos!

This is one of my new favorite veganized dishes. We have wanted to veganise this Chile Rellenos for ages and with the added help, creativity, and brain power from our good friend Terran, we have done it! Thanks Terran. Who am I?

Welcome to my new blog. It’s not my first blog but this is the first one about me. Once I sat down and decided to start writing I literally just sat—no writing happened for quite a while. I thought, “who wants to get to know me and read my thoughts and learn about vegan food from me?” I have no authority, am not a writer, and certainly haven’t made cooking my profession. But what I can say is that being vegan and making food is without question my passion. I thought my first post should give you an idea of who I’ve become this far in my life. I hope that this blog will be entertaining, helpful, and make people realize that we are all works in progress and that there is always room for growth and change. I, as much as anybody, need to remember this and I hope that writing here will help me grow and make positive changes in my own life. So… here’s my life in a nutshell thus far:
