Easy Delish Breakfast

I will admit that I am kind of a carb lover but for me it really comes in waves. I can easily go without eating pasta and bread but when I want it, I want it now dammit. Aaron and I are suckers for bagels, especially everything bagels (we also love other flavors). We love Hometown Bagels that are Chicago-Style. Apparently they are baked with steam, rather than being boiled then baked. We are lucky cause these particular bagels are sold at the farmers market downtown at the Daily Plaza and Aaron works right by there! He picks some up for us when needed on Thursdays.


  • Bagels (whatever kind you like but you probably won’t want a sweet one for this recipe)
  • Tofutti Cream Cheese
  • Tomato (organic), 2 slices per bagel
  • Mixed micro greens (from Green City Market!), small handful
  • Truffle salt if you have it OR pink Himalayan salt, just a pinch
  • Red onion sliced thinly if you want!


Toast your bagel to your liking, slather on the cream cheese, top it with onion, tomato, the micro greens and salt and your done! Enjoy!
