Any Bean, Any Green!

Cashew cream on EVERYTHING!

Thanks to my friend, Margot this recipe has a name—Any Bean, Any Green! This is a dish I believe I posted before but it accidentally got deleted when the blog underwent some updates on the back end. I also made some changes to the recipe, so we can just think of it as a whole new post!

Lately I have been trying to cut the amount of gluten being consumed in our home. I think I might have a slight intolerance. Cut to me in the fetal position on the sofa feeling insanely bloated. FUN! We are not going gluten free completely, but are cutting it down significantly. I still want my beer and I know I’ll use gluten in cooking from time to time or I’ll likely order something at a restaurant that has it. Maybe at a later date I will completely cut it out. We’ll see.

Fa-Fa-Fajitas!

Long and overdue recipe!

Hey Everyone!! So sorry it has taken me so long to post another recipe. Things have been busy to say the least, but I will save that for another post! Let me give you a recipe to make up for my blogging hiatus. These fajitas are so so so tasty! They came about when a really good friend, Kristine, told me about a recipe of hers. Kristine is an omnivore but when she describes her dishes to me, she replaces the animal ingredient with Julie-friendly ingredients. This way we can talk cooking and even share recipes—something I don’t usually do with my omnivore friends. I swear she will be vegan at some point. I’m just being patient and waiting until she comes around. Hehehe.

Kitchen Gadgets

Ok, this a post that will make any kitchen toy hoarder like myself drool, so beware! Once Aaron and I switched to a totally plant based diet we realized we (when I say we, I mean I) might want to invest in a few kitchen toys so that we could make some fun stuff. You can definitely be vegan and not need these tools, but I’m a girl that can’t walk away from an awesome kitchen gadget, especially ones that will last long and can do multiple things.

Epic Eggplant Sandwich

Looking at all my posts it seems as though I am on a Daiya kick and to that I say, why not? It’s fun to work with and to see that it actually melts is awesome. I have heard from some that it tastes salty or weird but after using it a number of times and with a number of different vegetables I think I’ve figured out how to make Daiya work. I personally don’t enjoy it as much when it is cold/unmelted, to me it just doesn’t work and you need to use a vegetable that it won’t overpower. If you don’t feel like using it though I don’t think it will lessen the awesomeness of this sandwich in any way. So use it or lose it!

Gourmet Pizza…boom (with Yukon Gold potats, caramelized shallots, and arugula)

We have eaten at Karyn’s on Green a number of times and love it! If you haven’t been and you live in Chicago, go dammit! ASAP! You won’t be disappointed. We ate a pizza there that totally tickled our taste buds so I was inspired to recreate it.

Makes one 12 inch pizza that Aaron and I can house, bigger families make more! Although Aaron and I do have insane appetites.

Easy Delish Breakfast

I will admit that I am kind of a carb lover but for me it really comes in waves. I can easily go without eating pasta and bread but when I want it, I want it now dammit. Aaron and I are suckers for bagels, especially everything bagels (we also love other flavors). We love Hometown Bagels that are Chicago-Style. Apparently they are baked with steam, rather than being boiled then baked. We are lucky cause these particular bagels are sold at the farmers market downtown at the Daily Plaza and Aaron works right by there! He picks some up for us when needed on Thursdays.
